Hints of global cuisine, inspired by Zar’s travels around the world, are also integrated throughout the menu. The beverage program, inspired by Zar’s favorite signature cocktails and regional wines, is comprised of standout, premium cocktails made with quality liquor made from top international and local distillers. Bar Manager Chris Allen Burton created a cocktail menu filled with unique interpretations of approachable, trending cocktails of the time, but that also reflect the bar’s ambience: warm, inviting, and personable.

Zaryab Sheikh, better known as Zar, is Owner of ZARZ on First in Southwest Portland, Oregon, a neighborhood bar with an approachable food menu featuring elevated classic comfort food. Sheikh graduated from the University of Portland in 1979 with his master’s degree in Business. Prior to venturing into the hospitality industry he spent almost two decades as a VP of Operations & Finance for Circle International (now CEVA Logistics). During his time at CEVA, he was also stationed in Europe where he began to find his inner passion for food and drink. His eclectic taste in great cuisine and even better cocktails led him to some of the most well known dive bars and restaurants in Europe - Rules, the oldest restaurant in London, The Fat Duck and The Waterside Inn, two well-known three-star Michelin star restaurants in Bray, are some of his favorites. He eventually moved back to his home in Portland after 16 years with CEVA and embarked on his own venture, where he now owns and operates four hotels throughout the Pacific Northwest including one in Troutdale, two in The Dalles and one in Pasco, Washington.
Robert Giovanetti is General Manager of Zarz Bar on First in Southwest Portland, Oregon. He began his career in the food and drink industry in the spring of 2002, leading the front of the house team at Café Du Nord in San Francisco. Soon after, Giovanetti concurrently managed Café Du Nord and The Riptide Tavern in 2012. He later moved to The Chapel, a converted ex-chapel music venue, where he oversaw various operations including the venue’s restaurant, bar and live music space.
Chris Allen Burton is the Bar Manager. Burton, who has been in the hospitality industry for more than two decades, hails from Texas. He moved to Cleveland and earned his stripes at McCarthy’s Ale House and Don’s Lighthouse. He then jumped to Restaurant Cuveé in Napa, California, curating the wine and food pairings. Up next: San Francisco where gained experience at O3 Bistro & Lounge, Grand Café, and Hi Dive, cultivating craft cocktail programs and loyal regulars. In 2015, he helped open The Rambler, in the Mississippi District of Portland, OR.
